I know it is not quite cold enough, but I had a craving for some homemade chilli. A day full of football games just put me in the mood. This was my dad's recipe and it was always delicious, it was so hot you would take a bite and then bury your head in the couch pillow to quiet the screams. But it was GOOD!. Although we like our chilli spicy, my recipe is toned down on the spice. I find that as I get older, my brain loves spicy hot food, but my stomach rebels. This is the basic recipe, flavor it the way you would like it to taste from mild to scream in the pillow hot.
Ingredients:
2 lbs. ground beef
3 cans Bushes Chilli Hot Beans
1 can Red Kidney Beans
1 large onion, chopped
Chilli powder (to taste)
1 to 1 1/2 cans of tomato juice
crushed red pepper
cyan pepper
shredded cheddar cheese (optional for topping)
Oyster crackers (optional for topping)
Directions:
Brown ground meat in frying pan, drain grease. Combine beef with the all the above ingredients (with exception of cheese and crackers). I will flavor and taste it as I go. Once I start getting a hint of the spiciness we want I will stop. (As the chilli simmers the spices will become hotter, so be careful how much you put in. Also, as it sits overnight in the refrigerator it will soak up even more spice)
Bring to a boil, turn heat to low cover with lid and simmer about 2 to 3 hours stirring occassionaly

Do you do this in the crock pot or on the stove. I assume since you are letting it cook for 2 to 3 hours, its on the stove....
Heather I make it on the stove. You could do it in the crockpot as well after the Ground beef is browned. You can also let it cook for a shorter time or even longer. I like to cook it for a while so the heat of the seasonings soak into everything. And, it usually will be spicier the next day after sitting in the refrigerator over night.

hmmm I could not find tomato juice anywhere...so I'm using sauce... ;) Hope it will still be great.
Wow! With the cold weather everyone must be making chilli! Make your own. That is what love about this recipe. It is so simple to add or delete the ingredients that you like or don't like. I had to make several adjustments because my dad would make it soooo hot! Good, but hot! Let me know how it turns out with the sauce.
