I made my own bread crumbs using rye bread. The rye bread gives the crust an excellent flavor. Heat oven to 250° and place about 10 pieces of bread on cookie sheet for about 1 to 2 hours or until completely dry. The key to making good bread crumbs is getting all the moisture out of the bread.
Once the bread is ready and completely cooled use a food processor or a blender. You can make it ahead of time and store in the cupboard. If they go stale, spread them on a sheet pan and bake in a 250-degree oven until the crumbs are crispy again.
Ingredients:
1 1/2 lbs Pork Cutlets
Dried Bread Crumbs
2 Eggs, slightly beaten
1/4 tsp. salt
1/4 tsp. onion powder
1/8 tsp. garlic powder
1/8 tsp. pepper
2 tbs. water
2 to 4 tbs. butter
Directions:
Mix egg and water. Mix bread crumbs, salt, onion powder, garlic powder, and pepper. Toss pork with egg mixture. Coat with crumb mixture. Heat butter in skillet over medium heat until hot. Cook pork in butter about 8 minutes or until done. Remove from skillet; keep warm.
