Chicken Caesar Salad
Ingredients:
4 boneless chicken breasts
1 head romaine lettuce
juice from one lemon
2 hard boiled eggs
1/2 tsp pepper
1/4 cup shredded Parmesan cheese
1 cup croutons
Dressing:
2 cloves of garlic
1/4 cup vegetable oil
1/4 cup grated Parmesan cheese
1 tablespoon Worcestershire sauce
1/4 tsp. dry mustard
1/2 tsp. salt
2 Tbsp lemon juice
Directions:
- Broil in the oven or cook the chicken on the grill until juices run clear. Cut into bite size pieces and set aside.
- Make salad dressing place garlic, oil, Parmesan cheese, Worcestershire sauce, mustard, and salt into a blender and process for about 15 seconds. Add the 2 Tbsp of lemon juice and process until smooth.
- rinse lettuce and pat dry. Tear into pieces, place in large salad bowl and squeeze lemon juice and toss lightly.
- Peel the eggs and chop
- Add eggs, chicken, pepper, and salad dressing to the salad and toss. Sprinkle with Shredded Parmesan and croutons.

This sounds really good I have to try it. My list today pretty much sounds like yours, not to mention this heat is not helping. Would love to make something where I don't have to have the stove on! Thanks for sharing
